If you hadn’t already guessed (based on yesterday’s post), my favorite taste of fall is apple pie. In fact, many of you asked about the family pie day that I talked about yesterday. For the past several years, my Mom, sister and SIL have gotten together to spend the day together making all things apple. Last year, we made over 50 pies, a dozen apple crisps and several batches of apple sauce. The apple sauce is all cooked and ready to go, but the pies and crisps are assembled and frozen. Then anytime you want fresh pie, you just pull one out the freezer and bake it. It’s so easy that it makes that loooooong pie making day totally worth it. I usually bake them longer then if I was just making a fresh, thawed pie – Usually about 90 minutes will do the trick or until the crust is golden brown. It’s great for those days when you are having company and don’t have time to bake something to serve.
Once in a while you need a little variety on the standard apple pie. I didn’t know I needed a little variety until I had my MIL’s apple crunch pie. It’s so good! – as long as you don’t know what the butter content is.
So, every once in a while, I peel the top crust off one of my frozen apple pies ~
Pull out the cook book that Joel’s Mom gave him for Christmas one year (full of favorite family recipes)
Mix up the crunch topping and pile it on top of the pie.
Then there is the long 90 minute wait until the pie is done.
As long as we’re waiting, you might as well write down the recipe for the crunch topping.
1/2 cup chopped pecans
1 cup brown sugar
1/2 cup flour
1/2 cup butter
Isn’t that easy?
To serve, just add a scoop of ice cream and drizzle with caramel (because there just aren’t enough calories in this already). Best served with a cup of coffee!

Now I need to go bike up hill for an hour, so I can eat that piece of pie.

I have a similar apple pie recipe that I’ve been baking for several years now and it won me a blue ribbon at a church pie baking contest! Ummm so good! Be back tomorrow.

Almost worse than how long it takes to BAKE the pie is the time it takes to COOL.

This is perfect! I need to make my step dad a pie this week and have apples and enough pie crust dough for just the bottom crust. Now I can just use this topping for the top!

Great change to the recipe. I like the thought of a book of family recipes – I did that for my family and has 4 generations of recipes. Every Christmas I dig it out and try and make one desert from each generation.

My daughter, granddaughter and I canned 21 quarts of applesauce last weekend. It tool all day. (we’re beginners, but getting there) We’re going to just can some apples plain so we can make whatever we’re craving later.
